Olvin Ariel Aguilar Ríos produces this coffee at Finca El Espino in Comayagua, Honduras, where he manages a small family farm planted primarily with Parainema. The farm sits around 1,350 meters and is managed with a strong focus on soil health, shade, and careful input use, including regular soil analysis and no glyphosate. Because the farm has no vehicle access, every bag of coffee must be carried out by mule—a demanding final step in getting the harvest to market.
This lot is a washed Parainema, dried in a parabolic shaded dryer. In the cup, it is described as balanced and clean, with a clear honey aroma and flavor, supported by citrus notes. Anthology selected six bags from this harvest as part of its focus on traceable, distinctive Honduran coffees.
